Gluten free. These two words affect pretty much every aspect of every day of my life – and have for close to 14 years. From what I buy at the grocery store. What I can and can’t order at restaurants. What medications I take. What I put on my body, on my lips, on my face, on my hair. Even what I use to wash my clothes.
My 7-year-old daughter can’t have gluten either, or casein, high fructose corn syrup or food dyes – which kind of eliminates most “kid foods.” And while the pediatric GI believes she most likely has celiac as well, her known issue, however, is neurological. She has ADHD with impulsive tendencies. Her behavior was almost unmanageable until we changed her diet – off-the-charts hyperactive, angry, aggressive. With these dietary restrictions, however, she’s like a different kid.
Even after having been diagnosed with celiac for so long, I feel like the learning curve just keeps coming as I learn new things, especially as I navigate the waters of my kiddo’s food issues as well. But these 14 years have taught me a lot about what I can have and what to avoid, and I want to share that with you! From recipes and products to tips and tricks, I’ll share my gluten-free life here with you.
