Easy Crock-Pot BBQ Chicken

This is one of my go-to dinners because it takes virtually no time to prepare, involves very few ingredients, and turns out absolutely delicious every time.

Ingredients
  

  • 1 tbsp olive oil
  • 1 cup gluten free flour

INGREDIENTS

3-4 boneless, skinless chicken breasts

1 bag frozen peppers & onions

1 jar GF BBQ sauce – I use Stubb’s

Salt and pepper

INSTRUCTIONS

Layer the bottom of the crock-pot with the frozen peppers & onions.

Place uncooked chicken breasts on top of the peppers in a single layer.

Poke holes in the chicken breasts with a knife so the BBQ sauce can permeate the chicken.

Crack salt & pepper over the top of the breasts.

Pour BBQ sauce over the top. I usually use at least 3/4 of the bottle, if not the entire bottle, so that the breasts are covered.

Cook on low for 8-10 hours, and you’ll have falling apart, super delicious, extra tender BBQ chicken ready to go by dinnertime.
